Re. your concerns, I would definitely recommend getting them checked by a solicitor to ensure that the contracts are secure and not one sided. Although, most of the contracts in Dubai are very one sided, and most developers are not willing to do anything about it.
But it doesn't hurt to get them checked over for your own peace of mind. The exchange process is very simple if you accept the contracts. A lot simpler than in the UK.
I've found setting up a bank account to be a little cumbersome, but that's just me. I know of some other buyers in Dubai who have setup bank accounts and have done it without any hassles!! Depends on the bank, I guess.
All in all, if the developers are reputed and the development is already under construction, you should not have any problems with it. But like I said before, appoint a solicitor and get them to check things out beforehand.
